Easy Baked Apples

Today is my Noni's birthday!!!
I hope she is celebrating in heaven with a slice of apple pie(her favorite)
This is a very emotional post for me, both happy and sad tears today. Losing my Noni(grandma) this summer has been difficult but i am so blessed to have such wonderful memories with her. This pretty little lady you see below was a master baker in the kitchen. She is the reason i know how to bake, and the reason i have such a passion

for it. Her love for desserts was passed down to my mom, and together they both taught me everything i know.

I remember every week coming home from school and my Noni would have something freshly baked coming out of the oven. Sometimes a strudel, sometimes a chiffon cake, either way there was always something baking at our house. Like any italian grandmother, she loved to entertain and feed people.
I will be sharing quite a few of her recipes on the blog, so keep checking back. I am so grateful i have these wonderful memories and recipes from her, that i can give to others.
These baked apples, although so simple, are sooo comforting and delicious. The smell of these apples baking fills the whole house with the aroma of hot apple pie, minus the calories! I like to add
a big scoop of ice cream.......because why not! This is such a great recipe for a dinner party because it looks and tastes divine, without spending to much time preparing. You can make as many as you like, or even just bake one for yourself as a treat! It's also a healthy snack alternative for the kids and waistline.....ok without the ice cream. My Noni use to serve them as is, no fancy toppings and they are still just as delicious.
This recipe is also easily adaptable, you can use sugar substitutes, add nuts, raisins, honey. They would even be good with some good maple syrup drizzled on top.
This Recipe is for 2, but double or triple it if you need more.
You will need:
~2 apples ( any kind )
~4 tablespoons brown sugar
~2 tablespoons softened (room temperature) butter
~1 teaspoon cinnamon
~1 cup apple juice
Instructions:
Start by preheating the oven to 375 F.
Cut the center core out of each apple, enough to make a pocket, but do not cut right through. Leave the bottom in tact.
In a small bowl mix together butter, brown sugar and cinnamon. Just till incorporated. Spoon the mixture into the cored apples evenly.
Pour the apple juice into a baking dish and sit the apples in it. Cover the dish with foil. Bake at 375 for approximately 45 minutes.
You could easily get these ready the day before if you are having guests, and then pop them into the oven while serving dinner!
Serve warm with a scoop of ice cream and a drizzle of caramel sauce.
