Hoito Pancakes


Hoito pancakes recipe

If you have never tasted or heard of a finnish pancake, you are missing out! I grew up eating these pancakes, from the famous Hoito restaurant in Thunder Bay ON. No offense to my mom, but she could never quite replicate them. I'm pretty confident i have mastered a very close copycat recipe.

These are a thin almost crepe like pancake, to be eaten slathered in butter and syrup. Top them with blueberry sauce and that's what dreams are made of!

So let's make this as simple as possible for everyone.

You will need:

~A blender

~Non stick pan about 8 inches

~1 cup flour

~3 eggs

~2 cups milk

~1/2 tsp baking soda

~pinch of salt

~butter for the pan

Instructions:

Add all ingredients (flour,eggs,milk, baking soda, salt) to a blender, mix until foamy and frothy.

Let batter rest on the counter at least 1/2 hour.

Now if you happen to have a restaurant size flat top griddle at home, use this! If not a frying pan will work just as well.

Heat your pan on medium/high heat with a small knob of butter. when the pan feels hot, use a 1/4 measuring cup (might need 1/2 cup depending on what pan you use) and ladle it onto the hot pan, quickly pick up the pan and swirl the batter around to coat the whole surface. let it cook till you see bubbles forming and then flip it. This is actually easier than normal pancakes. The first one or two never come out pretty, but who cares, tastes great. Keep going till all the batter is gone. half way through rebutter the pan. I like to brush mine with butter when there hot, but that's optional (i guess :/ ) Also they go great with bacon !
